Healthy Cream Soup Mix - Cream of Mushroom, Celery, Etc.

This recipe has been a staple in our home for over 30 years.  No more canned cream soups full of sodium and who knows what.  Easy to make.  

2 cups nonfat dry milk

3/4 cup cornstarch

1/4 cup instant chicken bouillon granules

2 Tbsp. dried onion flakes

1 tsp. dried basil, crushed (optional)

1/2 tsp. dried thyme, crushed (optional)

1/4 - 1/2 tsp. black pepper

Mix well in a large bowl.  Measure 1/3 cup of mix into 8-9 Tupperware snack cups or baggies.  Store baggies in a Tupperware container ready to use.  I usually make a double batch when I do this.  

When ready to use, combine the 1/3 cup mix with 1 1/4 cups water in a saucepan.  Cook and stir until thickened.  You may add diced mushrooms, sauted celery, sauted onion, chicken, broccoli, or nothing at all.  

Healthy sauce = 710 mg sodium, 1/5 gr. fat, 95 calories.

Regular cream of mushroom soup in 1995 =2370 mg. sodium, 23.8 gr.fat, 330 calories.
